An exquisite and complex Wild Specialty Beer, Matador showcase a masterful interplay of vibrant, jammy red fruits and deep, rustic complexity. Spontaneously fermented, it releases intense aromas of ripe raspberry and sun-warmed strawberry layered over a complex backdrop of leathery wild funk, wet oak, and earthy cacao nibs. The palate delivers an assertive, bright lactic sourness where the fermented berries shine, balanced by the subtle, dry bitterness of dark chocolate. It finishes incredibly dry and refreshing, leaving a lingering, intricate trail of wild yeast character, fruit skins, and a touch of oak tannin.
Appearance. Deep ruby-red to dusky rose with a slight, natural yeast haze. The head is a delicate light pink with moderate initial loft, but fades relatively quickly to a persistent collar, leaving minimal lacing.
Aroma. High intensity. Dominant aromas of jammy raspberry and fresh strawberry esters blend seamlessly with a complex, rustic wild yeast profile featuring leathery Brettanomyces funk, damp earth, and sharp lactic sourness. Underneath, a subtle, dusty, and rich dark chocolate aroma from the cacao nibs provides an earthy anchor, complemented by faint oaky vanilla.
Taste. Initial impression is a sharp, clean lactic sourness. Vibrant, highly attenuated flavors of fermented raspberry and strawberry offer a bright fruitiness entirely devoid of residual sugar, accompanied by a moderate earthy, dark chocolate flavor from the cacao nibs. The wild fermentation lends complex funk, wet hay, and a touch of oak wood. Hop flavor is absent, and hop bitterness is extremely low, though cacao adds a slight woody bitterness. Finishes bone-dry, highly acidic, and crisp, with a lingering raspberry seed and cacao tannin aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation that creates a lively, tingling sensation. A very light, well-integrated alcohol warmth is present. Low to moderate astringency from fruit skins and cacao nib tannins provides a structured dryness without being harsh.
