Thunderstruck is a vibrant Saison that leads with a vivid, tart aroma of juicy lemon driven by heavy additions of lemon peel and Lemon Drop hops. The grain bill, featuring barley, spelt, and rye, provides a rustic, grainy foundation with a distinct peppery spice. Amarillo hops contribute subtle floral and citrus backing notes that complement the yeast’s spicy, phenolic character. The palate is exceptionally dry and effervescent, showcasing a sharp, refreshing citrus zest that lingers into a clean, spicy finish. It exemplifies a modern, citrus-forward farmhouse ale with complex cereal depth, high drinkability, and a bright, aromatic punch.
Appearance. Pale gold (approx. 5-6 SRM). Large, billowy white head with excellent retention and Belgian lacing. Unfiltered with a slight to moderate haze, typical of a grain bill containing spelt and rye.
Aroma. High intensity aromatic profile dominated by zesty lemon and grapefruit. Strong citrus esters and spicy, peppery phenols are present. Amarillo and Lemon Drop hops contribute floral and herbal undertones. The malt character is grainy and rustic with a hint of spicy rye.
Taste. Sharp, tart lemon citrus flavors take the lead, supported by a grainy, crackery malt base. The mid-palate reveals a spicy, black pepper phenolic character from the yeast, enhanced by the inclusion of rye. Hop bitterness is moderate and well-balanced. The finish is remarkably dry, clean, and refreshing with a lingering citrus and spicy aftertaste.
Mouthfeel. Medium-light body with a crisp, effervescent, and highly carbonated texture. No noticeable alcohol warmth. The rye provides a slight pleasant graininess, but the overall feel remains light and refreshing.
