This Best Bitter presents a modern take on the classic British style, balancing a smooth, nut brown maltiness with a vibrant hop character. Pioneer and Progress hops added during the boil contribute a layered profile of bright citrus and subtle culinary spice. The late addition of Amarillo at flame out introduces distinct notes of orange peel and bittersweet marmalade, elevating the aromatic complexity. While the malt provides toasted, nutty depth, the finish remains crisp and decidedly bitter. The interplay between traditional bready malt and contemporary fruity hop accents defines this sessionable yet deeply flavorful ale.
Appearance. Medium copper to reddish-brown (14-16 SRM). Excellent clarity with a fine-textured, off-white head that shows moderate retention and light lacing.
Aroma. Moderate malt aroma featuring notes of toasted nuts, biscuit, and low caramel. Hop aroma is moderate and expressive, displaying orange marmalade, spicy earthiness, and a touch of floral citrus. Low fruity esters of dried pear or apple are present.
Taste. Initial impression is of smooth, toasted malt and nutty bread crusts, followed quickly by a medium-high hop bitterness. Hop flavors of orange peel, spice, and resinous wood from the Pioneer and Progress varieties lead into a dry, crisp finish. The aftertaste lingers with a pleasant herbal bitterness and a hint of dark marmalade.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate, providing a gentle prickle on the tongue. Alcohol warmth is negligible, making for high drinkability without any astringency.

When we found out that Domkraft were headlining the Masters Of The Riff festival in
London, we knew we had to jump at the chance to work with a band I’ve loved for a
long time. When they replied to our original enquiry, we were frankly amazed when
they wanted to brew up a traditional rich bitter. So we went with a super traditional
recipe, which focused on a mix of malts to create a nut brown colour and flavour
profile. Pioneer and Progress hops in the boil added a traditional spicy, citrus tinged
bitterness with US hop Amarillo at flame out bringing an orange peel/marmalade
vibe.
The Big Chill is a 4.6% Best Bitter, perfect for this time of year.
