This Imperial Stout presents a decadent sensory profile, defined by its maturation in Heaven Hill Distillery bourbon barrels. Aromas of rich dark chocolate from cacao nibs and deep toffee notes from muscavado sugar lead into a complex palate of roasted malts and tart sour cherry purée. The barrel aging contributes distinct layers of toasted oak and vanilla, melding with the high-gravity sweetness. A viscous, velvety texture carries intense flavors of bittersweet cocoa and dark fruit, concluding with a significant, well-integrated alcohol warmth and a lingering, luxurious finish of bourbon-soaked cherries and charred oak.

Appearance. Jet black and fully opaque (40+ SRM). Pours with a dense, dark tan to mahogany head that shows moderate retention. High viscosity is evident through thick legs coating the glass.

Aroma. High intensity and deeply complex. Dominant notes of bittersweet chocolate and fudge from cacao nibs intermingle with the rich, molasses-like scent of muscavado sugar. The Heaven Hill barrels provide prominent oak, vanilla, and bourbon spirit notes, while the sour cherry adds a bright, slightly acidic fruit ester. Roast malt provides a consistent background of espresso and charred grain.

Taste. An initial wave of luscious dark sugar and chocolate sweetness is immediately balanced by a sharp, tangy sour cherry character. Mid-palate reveals complex roasted grain, coffee, and earthy cacao. The bourbon barrel influence is strong, offering caramel and spicy oak. Medium-high bitterness from roasted malts provides structure, leading to a long, warming finish that balances bittersweet cocoa with fruit acidity.

Mouthfeel. Full-bodied, chewy, and highly viscous with a velvety, luscious mouth-coating texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, reflecting the 11% ABV without being sharp or solventy.
