This American Stout presents a dark, evocative profile defined by deep roasted malts and flavorful additions of maple and pecan. Jet black in the glass, it leads with an aroma of dark chocolate and espresso, closely followed by the toasted, earthy scent of pecans and a distinct woodsy maple sweetness. The palate is dominated by bittersweet cocoa and charred grain, balanced by a resinous hop bitterness that underscores its American origins. The pecans provide a rich, nutty depth, while the maple syrup contributes a smooth, rounded sweetness that lingers through a medium-full, slightly creamy finish, creating a complex and wicked dessert-like character.

Appearance. Opaque jet black (40 SRM) with a large, persistent light brown head and excellent lacing.

Aroma. Moderate to strong roast aroma characterized by dark chocolate and roasted coffee. Notable nutty pecan notes and a woody, sweet maple syrup character are present. Low resinous hop aroma and subtle dark fruit esters.

Taste. Initial impression of bittersweet chocolate and espresso. The flavor profile features rich, earthy toasted pecans and a smooth maple sweetness that balances the roasted grain. Medium-high bitterness is present but softened by the adjuncts. The finish is balanced and slightly lingering with a clean, roasted aftertaste.

Mouthfeel. Medium-full body with a creamy, somewhat velvety texture. Moderate-high carbonation and a noticeable but smooth alcohol warmth.

Then our Band collab for the month is with the fantastic Derby based black thrash metal band Devastator . Brewed at the beginning of January, this 6.66% Maple and Pecan Stout will help fight against the winter gloom.

For this one, we wanted to create some delicious nuttiness in the base beer before we added any natural flavourings, so we added loads of Munich malt, Carared and Roast Barley to build the foundation for a deep, dark flavour of nuts, chocolate and a touch of coffee. We then went with English hops Whitbread Golding Variety and German Tradition hops in the boil, creating spicy, earth and floral notes. We then finished the beer with natural Maple and Pecan flabours to create a proper fireside winter warmer!
