This Australian Sparkling Ale presents a refreshing, high-energy profile defined by its characteristic spritzy carbonation and lean malt backbone. Pouring a medium gold with a persistent frothy head, it leads with an aroma of fresh pears and red apples, complemented by the earthy, resinous, and slightly peppery notes typically derived from Pride of Ringwood hops. The palate reflects a clean, bready malt sweetness that is quickly overtaken by a firm bitterness and a remarkably dry, crisp finish. While the secondary Aussie IPA moniker suggests a modern hop intensity, the classic pome fruit esters and mineral-edged, herbaceous hop character remain central, providing a complex yet incredibly drinkable experience.
Appearance. Medium gold (5-7 SRM). Tall, frothy, persistent white head with tiny bubbles and significant lacing. High effervescence with brilliant clarity unless the yeast is roused during the pour, creating a cloudy appearance.
Aroma. Moderate intensity featuring a clean mix of pear and apple esters over a neutral grainy to lightly bready malt base. Hop character is notably earthy and herbaceous with a subtle peppery quality; very fresh examples may show a light sulfury yeast note.
Taste. Initial impression is of mild, bready malt that is rapidly balanced by a medium-high bitterness. Flavors of apple and pear esters are prominent. Hop flavors are earthy, resinous, and peppery, persisting into the aftertaste. Finishes very dry and crisp with a lingering, slightly coarse bitterness and no caramel flavors.
Mouthfeel. Medium to medium-full body with very high carbonation, providing a mouth-filling, spritzy carbonic bite. Smooth yet gassy; highly attenuated with a light alcohol warmth appropriate for its strength and a clean, non-astringent finish.
