Black Forest Brewing Cuckoo
Cuckoo is a vibrant Specialty IPA that marries the rustic spice of rye and smoothness of oat flakes with a complex botanical profile. The addition of elderberry juice imparts a deep, dusky hue, while elderflower extract provides a delicate floral lift to the high-intensity hop character. Bright tropical notes of pineapple and mango from El Dorado and Citra are complemented by the zesty, grapefruit punch of Comet hops. This interplay of dark berry fruit and resinous hops sits atop a clean malt foundation, finishing dry with a lingering botanical bitterness and a hint of peppery rye.
Appearance. Deep ruby to dark mahogany (28-35 SRM) with a persistent, fine-textured light tan head and excellent lacing. Slight haze is present from the high protein content of the wheat and oat flakes.
Aroma. High hop intensity featuring distinct citrus and tropical fruit notes from Citra and El Dorado. The elderflower contributes a perfumed, floral sweetness that blends with the herbal, wild-fruit character of elderberry. Subtle spicy rye notes and a touch of bready malt provide a supportive base with a clean fermentation profile.
Taste. The initial impression is hop-forward, showcasing grapefruit and stone fruit flavors from Comet and El Dorado. Elderberry adds a tart, dark fruit complexity that integrates with a firm, medium-high bitterness. Low malt sweetness is quickly overtaken by a dry, spicy finish driven by rye malt and botanical extracts, leaving a clean, resinous aftertaste.
Mouthfeel. Medium body with a notable silkiness and creaminess from the oat flakes. Carbonation is moderate, providing a crispness that balances the fruit density. A very light alcohol warmth is present, with no harsh astringency from the botanical additions.
