Rubicon is a sophisticated vintage Saison that bridges the gap between traditional farmhouse ales and wild barrel-aged complexity. Matured for two years in American oak, it showcases a striking balance of crisply sour fruit and structured wood character. The brewery’s native Morrigan 1 wild yeast delivers a distinctive, sharp spiciness that interplays with notes of raspberry sherbet and toasted biscuit malt. Spontaneous secondary fermentation in the barrel adds layers of depth, resulting in a bone-dry, sparkling, and immensely refreshing profile. This limited-release ale offers a vibrant sensory journey where rustic acidity meets the elegance of extended oak aging and native fermentation.
Appearance. Deep gold to light amber in color with a slight, natural haze from its unfiltered state. It presents a long-lasting, dense, rocky ivory head that leaves significant Belgian lace on the glass. Highly effervescent with a constant stream of fine bubbles.
Aroma. High intensity with a complex blend of sharp lactic sourness and fruity esters reminiscent of raspberry and lemon zest. A prominent spicy yeast character from the native Morrigan 1 culture provides notes of cracked black pepper, backed by toasted biscuit malt and a distinct woody, vanilla-tinged oak presence.
Taste. The initial impression is one of crisp, clean acidity and raspberry sherbet. Moderate spicy phenols and a soft biscuit malt base are quickly overtaken by a firm, refreshing sourness that replaces hop bitterness in the balance. The mid-palate reveals dry oak tannins and a hint of wild funk, leading to a bone-dry, tart, and sparkling finish with a lingering spicy aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that tingles the tongue. There is a light, well-integrated alcohol warmth and a faint, pleasant wood-derived astringency that enhances the dry finish.

Limited to a scant 520 individually numbered bottles, the angels got a good share of this beauty before we deemed it ready for mere mortals. Rubicon is a vintage saison, matured and naturally soured in American oak barrels for over two years. Initial fermentation was “Morrigan 1”, our native wild yeast, subsequent fermentation in the barrel was entirely spontaneous.
