This complex Straight Sour Beer evolves from a mature rye saison base aged in American oak. The sensory profile is defined by the vibrant inclusion of fresh Longford strawberries from McCormack Fruit, which impart a distinct berry aroma and a subtle ripe fruit flavor. Fermented with the native Irish yeast strain Morrigan 1, the beer presents a sharp lactic sourness balanced by the spicy character of Rye malt. Years of barrel aging introduce a nuanced oak depth that complements the bright acidity. It finishes remarkably dry and refreshing, offering an elegant interplay between tartness and the ghost of strawberry sweetness.
Appearance. Bright amber color with a distinct pink tint; clarity is clear to slightly hazy; features a large, off-white to pink-tinged head with poor retention and high effervescence.
Aroma. High intensity sourness; dominant sharp lactic character alongside pronounced fresh strawberry notes; light spicy rye grain and a subtle woody American oak presence; esters of lemon and tart apple from the Morrigan 1 yeast; no hop aroma.
Taste. Initial impression is a clean, assertive lactic tartness; the mid-palate reveals bready and spicy rye flavor paired with a mild, ripe strawberry character; American oak aging contributes a matured depth; balance is firmly acidic but supported by a light grainy malt backbone; finishes very dry and clean with a lingering berry tartness and no hop bitterness.
Mouthfeel. Medium-light body, slightly fuller than typical for the style due to the rye grain; high carbonation; crisp acidity; light, well-integrated alcohol warmth; no astringency.

Introducing Phraseology, wild Irish saison with strawberries. “Phraseology” was conceived on 3/11/2020. It then underwent a two year gestation in American oak barrels where it soured naturally, but we didn’t know quite what it would grow up to become. After a chance meeting with a Longford strawberry grower, its destiny was manifest, and today it is finally ready for release. Phraseology is a rye saison, fermented with our native Irish yeast strain Morrigan 1 (you may remember her from such beers as Savage, Allta and Rua). After about 18 months in oak, we added pureed, fresh local strawberries, from McCormack Fruit in Longford, straight into the barrels, and left the microbes to work their magic. Flavour
The result is a dry and refreshing beer, which manages to be both sour and sweet, with a distinct berry aroma, and a mild ripe fruit flavour. The beer pours a bright amber colour with a slight pink tint (try not to disturb the sediment).
Like ourselves, McCormack Fruit work hard, in harmony with nature, to be at the top of their game. They grow the sweetest strawberries and raspberries, and distribute across the midlands and west of Ireland.
As with all our bottled beers, Phraseology is 100% natural, bottle conditioned and suitable for vegetarian and vegan diets. Alc. 6.5% vol.
