Bizio Basoa is an expressive, wild-fermented Basque cider that integrates organic heritage apples with Navarra-grown Klaudia plums. A complex blend of Bost Kantoi, Urdin Sagarra, Buztin Sagarra, San Pedro, and Konika apples provides a rustic, tart foundation. Hand-pitted plums contribute an elegant fruitiness and a distinctive aromatic hint of bitter almond and plum pits. The profile is sharpened by a bright, lemon peel acidity and a fresh, spontaneous fermentation character. It concludes with a clean, bone-dry finish, supported by a moderate carbonation and a comfortable, structural bitterness that highlights its artisanal, farmhouse origin.
Appearance. Pale straw to light gold (SRM 2–4); hazy with a brief, effervescent white head that leaves minimal lacing; moderate carbonation is visible.
Aroma. Moderate to high intensity; sharp green apple and fresh tart plum skins dominate; secondary notes of bitter almond and plum pit; distinct native yeast character with hints of lemon peel and light earthy funk.
Taste. Initial impression is bracingly tart; vibrant flavors of green apple and Klaudia plums; mid-palate reveals a subtle nutty depth reminiscent of fruit pits; high fruit-acid balance; bone-dry finish with a lingering, pleasant phenolic bitterness and a clean aftertaste.
Mouthfeel. Medium-light body; moderate carbonation provides a crisp, refreshing prickle; no alcohol warmth; slight tannic astringency from apple and plum skins adds structure.
