Bizarre Brewing The Red Clock

The Red Clock is a refined Altbier that bridges tradition with a unique addition of red corn masa harina. A foundation of German Pilsner and Munich malts provides a rich, toasted bread crust and nutty depth, enhanced by caramelized Munich for subtle sweetness. The inclusion of red corn introduces a delicate, grainy sweetness and a exceptionally smooth texture. Hallertau Mittelfrüh and Sonnet hops contribute elegant layers of spicy, floral, and slightly herbal notes, balancing the malt with a firm, crisp bitterness. Open-fermented with a house Kölsch strain, the finish is remarkably clean and dry, showcasing a harmonious blend of old-world structure and innovative ingredients.
Appearance. Deep amber to brilliant copper with exceptional clarity. Topped by a thick, creamy, long-lasting off-white head that exhibits excellent retention and lacing.
Aroma. Moderate-high malt intensity featuring toasted bread crust, nutty Munich notes, and a faint, sweet graininess from the masa harina. Hop character is moderate-low, presenting as spicy and floral. The fermentation profile is very clean, with only a subtle, low ester presence.
Taste. Initial impression of toasted, nutty malt richness followed by a firm, clean bitterness. Flavors of baked bread and light caramel from the Munich malts are balanced by spicy and floral hop notes. The red corn provides a unique, soft grain character in the mid-palate. Finishes very dry and clean with a lingering, crisp bitterness and toasted malt aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy palate. Carbonation is medium-high, providing a crisp and refreshing sensation. No alcohol warmth is detected, and astringency is absent.

We brewed The Red Clock with a base blend of German pilsner, Munich, and caramelized Munich malts, then added in red corn masa harina. We hopped this altbier with Sonnet and Hallertau Mittelfrüh. The Red Clock was then open-fermented cool with our house kölsch strain.
