This session-strength Kölsch, termed a "Little Ale," presents a sophisticated sensory tapestry. A base of German pilsner and Vienna malts, supplemented by spelt malt and flaked wheat, creates a soft, bready foundation. The infusion of chamomile and yarrow flowers introduces an elegant, tea-like botanical layer. Hops like Lorién, Centennial, and Riwaka contribute subtle notes of lemon peel and wild meadow, which harmonize with the faint orchard fruit esters from the house yeast. It is exceptionally clean and well-attenuated, delivering a crisp, dry finish that emphasizes the delicate interplay between floral botanicals and noble-leaning hop character.
Appearance. Light gold (3-4 SRM) with brilliant clarity. Pours with a delicate, frothy white head that leaves light lacing and persists as a thin collar.
Aroma. Low grainy-sweet malt aroma with a faint bready note. High botanical intensity featuring chamomile and yarrow, suggesting dried flowers and herbal tea. Subtle hop character from Lorién and Centennial provides floral and soft citrus notes. Clean fermentation with very low pear esters.
Taste. Initial impression of soft, grainy-malty sweetness. The palate is dominated by the herbal complexity of chamomile and yarrow, offering a meadow-like florality. Hop flavor is medium-low, with Riwaka and Centennial adding notes of lemon zest and light grape. Bitterness is medium-low and well-integrated.
