Bizarre Brewing Dripping Earth

This inventive American Pale Ale marries the resinous depth of the Pacific Northwest with a crisp, European-inflected malt base. German pilsner malt and English pale malt provide a crackery, bready foundation, while flaked oats lend a soft, silken texture. Foraged fir tips and branches impart a distinctive coniferous brightness that integrates seamlessly with the pine and citrus notes of Centennial, McKenzie, and Simcoe kettle hops. A cool fermentation with a house Kölsch strain ensures a clean profile, allowing the vibrant dry-hop aromas of Mosaic, McKenzie, and Chinook LupoMAX to shine with notes of forest floor, grapefruit, and tropical berry.
Appearance. Pours a brilliant pale gold (approx. 6 SRM) with a thick, frothy white head that shows excellent retention and leaves intricate lacing. A very faint haze persists from the addition of flaked oats and heavy dry-hopping.
Aroma. High intensity and complex. Dominant notes of fresh evergreen needles and resinous pine from the fir tips are layered over citrus zest and floral McKenzie and Centennial hops. Subtle tropical berry notes from Mosaic emerge as it warms, supported by a low, grainy-sweet malt character and a hint of vinous esters from the cool fermentation.
Taste. The palate opens with a crisp, bready malt sweetness quickly overtaken by assertive forest flavors of spruce and fir. Hop flavors of grapefruit pith, pine resin, and soft stone fruit follow. Bitterness is moderate but firm, providing balance without becoming harsh. The finish is remarkably clean and dry, leaving a lingering impression of fresh-cut wood and citrus peel.
Mouthfeel. Medium-light body with a noticeably smooth, rounded texture thanks to the flaked oats. Carbonation is moderate-high, providing a refreshing prickle on the tongue. There is no astringency from the fir tips and no perceptible alcohol warmth.
