Appearance. Pale straw to light gold (3–5 SRM). Persistent, thick, mousse-like white head with excellent lacing. Distinctive haze from the high protein content of the flaked wheat and spelt malt.
Aroma. Moderate intensity featuring grainy-sweet Pilsner malt and a specific rustic, nutty, and slightly earthy aroma from the spelt. Low to moderate yeast esters of banana and spicy clove phenols, kept restrained by cold fermentation. Low floral and spicy hop notes from German Saphir.
