Birrificio WAR CANEDIWAR
This Specialty IPA is a masterclass in hybrid fermentation, marrying the bold tropical impact of Citra hops with the dual character of Trappist High Gravity and London Ale III yeasts. Brewed with a base of Pils malt complemented by wheat flakes and oat flakes, it presents a lush, hazy profile. The sensory experience is defined by a complex interplay of white fruit and delicate spice from the Belgian yeast alongside the lush yellow stone fruit esters of the London Ale III. At 8% ABV, the beer remains smooth, delivering an intense bouquet of citrus, mango, and peppery phenols.
Appearance. Pale gold to deep yellow (5–7 SRM). Slightly veiled to hazy with a thick, compact, fine-grained white head showing excellent retention and lacing.
Aroma. High intensity. Dominant Citra hop notes of grapefruit and mango. Layered fermentation esters of pear, white grape, and peach are underpinned by a subtle peppery phenolic spice. Low grainy malt sweetness.
Taste. Assertive hop flavors of citrus and tropical fruit lead. Mid-palate reveals complex esters of white and yellow fruits alongside a delicate spicy phenol. Low crackery malt flavor from the Pils malt base. Bitterness is moderate to firm but smoothed by the grain bill. The finish is off-dry and lingering with fruit and spice.
Mouthfeel. Medium-full body with a notable creaminess and soft texture from the wheat flakes and oat flakes. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present.
