This New World Cider presents a sophisticated, bone-dry profile reminiscent of a sparkling wine. Utilizing Renetta, Granny Smith, and Pinova apple varieties, it delivers a bright, acidic punch characterized by fresh green apple and delicate floral highlights. Fermented with Saccharomyces bayanus and matured on its lees in steel, the profile gains a subtle balsamic complexity and a clean, refined finish. The high effervescence and 7.2% ABV provide a lively, warming structure that balances the sharp fruit acids, resulting in a crisp, spumante-like elegance that emphasizes purity of fruit and a stark, extra brut finish.
