This sophisticated Saison balances rustic grains with a vibrant wild character. Freshly harvested elderflower imparts an intense floral bouquet and vinous notes of gooseberry and Sauvignon Blanc, evoking the sensory profile of Lombardy's traditional millet biscuits. Long maturation in wine-seasoned oak barrels introduces a spontaneous complexity, marked by flinty minerality and bright, citrusy acidity driven by Brettanomyces. The palate is exceptionally dry and effervescent, showcasing a tapestry of garden herbs and aromatic citrus peel against a backdrop of soft, grainy malt. It is a stunning, spumante-like expression where floral freshness meets the sharp, earthy soul of a farmhouse ale.
Appearance. Brilliant pale gold to light orange (6-8 SRM). Topped by a dense, long-lasting rocky white head with exceptional Belgian lacing. Highly effervescent with visible rising carbonation.
Aroma. High intensity; a complex fusion of fresh elderflower and funky wild yeast. Floral and vinous aromatics dominate, reminiscent of Sauvignon Blanc, gooseberry, and flint. Spicy phenols like black pepper and citrusy esters are complemented by earthy Brettanomyces notes and a subtle, honeyed malt graininess.
Taste. Initial impression is sharp, dry, and incredibly fresh. Vibrant elderflower and citrus peel flavors lead, followed by a rustic, grainy malt presence reminiscent of millet. A distinct, firm acidity from wild fermentation provides a tangy counterpoint to moderate hop bitterness. The finish is bone-dry and lingering, with notes of aromatic herbs and a mineral, stony quality.
Mouthfeel. Medium-light body with very high, spumante-style carbonation. Crisp and effervescent on the tongue. Alcohol warmth is light and well-integrated. Refreshing acidity creates a clean, mouth-watering sensation without significant astringency.

Il prodotto finito è una Saison dal profilo Sour, brillante e dorata in cui, alle note fruttate e lievemente speziate della birra di partenza, vengono ad aggiungersi l’acidità intensa del lievito selvaggio e l’incredibile freschezza floreale del sambuco, di cui si riconoscono perfettamente gli aromi come appena colto dalla pianta, con le ben note sfumature quasi vinose che ricordano finanche un sauvignon: i profumi dell’orto, le erbe aromatiche, la buccia di agrume, l’uva spina, la pietra focaia, in un ventaglio ampio e sbalorditivo. Fresca , pungente e piacevolmente acidula.
