This Wild Specialty Beer is a sophisticated evolution of a spontaneous ale, aged in barrels with cherries to create a layered sensory experience. It balances bright, tart fruit with the complex, funky depth of a traditional stone cellar. Aromas of damp wood and aged oak intertwine with delicate red floral notes and sharp citric nuances. On the palate, the beer is remarkably dry and mineral-forward, allowing the vibrant cherry esters to shine through without residual sweetness. The spontaneous fermentation provides a crisp acidity that highlights the fruit while oak tannins offer an elegant, structured finish that is both clean and lingering.
Appearance. Presents a pale amber to copper-red hue with a distinct pinkish tint from the fruit; appearance is slightly hazy with a thin, light-pink head that shows moderate to low retention.
