Scires is a profound Straight Sour Beer that bridges the gap between traditional brewing and viticulture through the integration of 25% fresh Vignola cherries. This mixed fermentation ale reveals a deeply layered sensory landscape, where the vibrant, tart character of the stone fruit melds seamlessly with a refined lactic acidity. Bottle refermentation ensures a sophisticated evolution, resulting in a meditation beer of remarkable personality. The aromatic profile is a sophisticated tapestry of bright red fruit and subtle earthy undertones, while the palate offers a structured, vinous complexity that balances the intense fruit essence against a clean, acidic backbone.
Appearance. Deep ruby to garnet color (15–25 SRM). Significant haze from fruit solids and yeast. Large, dense, light-pink head with moderate retention and fine lacing.
Aroma. High intensity. Sharp lactic sourness dominates, layered with a powerful, fresh Vignola cherry character including notes of tart skin and sweet pulp. Subdued crackery malt in the background. No hop aroma. Clean fermentation with no funky Brettanomyces traits.
Taste. Initial impression is sharply acidic and fruit-forward. Clean lactic sourness provides a bright foundation for intense cherry flavors. Low bready malt flavor supports the acidity. Hop bitterness is undetectable (very low IBU). Dry, crisp finish with a lingering, tart red-fruit aftertaste and a vinous complexity.
Mouthfeel. Medium body, which is slightly fuller than typical for the style due to the 7.5% ABV and fruit density. High carbonation. Noticeable but well-integrated alcohol warmth. Minimal astringency from cherry skins.
