Sfinge is a bright and refreshing Witbier that captures the essence of a Mediterranean afternoon. It pours with a classic milky-yellow haze, topped by a persistent, moussy white foam. The aromatic profile is led by zesty orange peel and fragrant coriander, layered over a soft base of bready wheat and faint honey notes. On the palate, a crisp, effervescent mouthfeel carries flavors of citrus and subtle spice toward a bone-dry, thirst-quenching finish. Appearance. Pale straw to deep yellow (3 SRM), heavily cloudy with a characteristic milky, whitish-yellow opacity. Features a dense, white, moussy head with excellent retention and light lacing.
Aroma. Moderate intensity. Fragrant notes of lemony coriander and zesty orange peel dominate, supported by a bready, grainy wheat malt character. Subtle hints of vanilla and a light, peppery yeast ester add complexity. Hop aroma is absent.
Taste. Refreshingly crisp with a pleasant bready malt foundation. Initial impressions of sweet orange citrus are balanced by herbal-spicy coriander. Hop bitterness is very low, serving only to balance the grain. The finish is remarkably dry and clean, without any lingering bitterness or harshness.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the unmalted wheat. High, effervescent carbonation provides a lively prickle on the tongue. Minimal alcohol warmth and no astringency.
