Samba Sour is a vibrant Catharina Sour that leads with a powerful sensory punch of exotic fruit. The addition of guava and litchi creates a floral and musky perfume that dominates the nose, while mango provides a fleshy, tropical depth to the mid-palate. Fermented with Lactobacillus to ensure a clean, sharp acidity, this Wild Specialty Beer is designed for maximum refreshment. The fruit character remains fresh and bright, perfectly integrated with a light, bready malt base. It finishes bone-dry and crisp, delivering an incredibly rinfrescante experience that highlights the brewer's skill in balancing intense tropical adjuncts with a snappy, lactic tartness.

Appearance. SRM 3-5. Pale straw to soft gold with a persistent haze from the heavy fruit additions. Pours with a moderate, frothy white head that shows moderate retention and leaves light lacing.

Aroma. High intensity aromatics of fresh guava and floral litchi. Distinct notes of ripe mango follow, backed by a clean, sharp lactic sourness. Malt is very low and bready; hop aroma is absent. No wild yeast funk is present, focusing entirely on fruit purity.

Taste. Initial impression is an assertive but clean lactic tartness. Intense flavors of guava and sweet litchi dominate, with mango providing a soft fruitiness. Very low bitterness, as the acidity provides the balance. Malt flavor is a neutral, cracker-like background. The finish is very dry and refreshing with a lingering tropical fruit skin aftertaste.

Mouthfeel. Medium-light body with a slight creaminess from fruit solids. High carbonation creates a lively, spritzy sensation on the tongue. No alcohol warmth is perceived. Very low astringency, despite the high acidity.
