This Belgian Pale Ale serves as a transatlantic bridge, merging Flemish tradition with the bold character of American hops. A collaboration with Prairie Artisan Ales, it pays tribute to classic Trappist profiles while introducing a wild, modern edge via Brettanomyces. The sensory experience is defined by a bready malt base and a complex aromatic layer of earthy funk, pineapple, and citrus. The palate starts with toasty biscuits and pear before a crisp, dry finish takes hold, driven by firm hop bitterness and rustic, leathery fermentation notes. Effervescent and sophisticated, it reinterprets the style with a vibrant, dry-hopped soul and a refined, wild-yeast complexity.
Appearance. Deep amber to burnished copper (12-14 SRM). Slight haze is present from the wild yeast. It features a dense, rocky, off-white head with excellent retention and intricate lacing.
Aroma. Moderately high intensity. A base of bready and lightly toasty malt supports a complex bouquet of pineapple, grapefruit, and resinous American hops. Distinctive Brettanomyces notes provide a rustic, horse-blanket funk and earthy leather. Subtle spicy phenols and fruity esters of pear and orange zest linger in the background.
Taste. Initial impression is a balance of biscuity malt and bright citrus hop flavor. The mid-palate introduces a dry, spicy fermentation character with earthy Brett notes. Bitterness is firm and higher than typical for the style, leaning into the American hop influence. The finish is remarkably dry and clean, with a lingering herbal and earthy aftertaste and no residual sweetness.
Mouthfeel. Medium-light body with a lively, high carbonation that scrubs the palate. A subtle, well-integrated alcohol warmth is present at 6.2% ABV. Low astringency with a crisp, refreshing, and highly attenuated mouthfeel.
