Brewed with hand-harvested sale di Mozia, it delivers a delicate, mouthwatering salinity that frames vibrant, fresh aromas of gooseberry, zesty citrus peel, and elegant white flowers. A clean, bottom-fermented profile lets the delicate wheat backbone shine, while the sharp, thirst-quenching acidity harmonizes with the subtle maritime saltiness, finishing bone-dry and effervescent. It is a wonderfully bright and revitalizing interpretation of the classic German sour wheat ale.
Appearance. Pale straw to light yellow (SRM 3-4) with a slight, moderate haze. Features a moderate, dense white head with tight bubbles, excellent effervescence, and good retention.
Aroma. Moderate intensity with a clean, sharp lactic sourness. Prominent fresh aromas of gooseberry and citrus peel are complemented by delicate notes of white flowers, all layered over a low, doughy, bready wheat malt background with a faint hint of sea-salt minerality.
Taste. Crisp and refreshing initial impression dominated by moderate lactic sourness and a distinct, mineral-rich saltiness from the sale di Mozia. Low bitterness and no hop flavor.
