This Wild Specialty Beer presents a striking orange hue, born from a complex fermentation process in barriques and tonneaux. The sensory profile is defined by a significant addition of local apricots and a pied de cuve of Sauvignon Blanc grapes, which provide a vibrant stone-fruit core and vinous acidity. Aged hops and wheat create a sturdy structural base for the wild fermentation’s rustic complexity. The aroma reveals deep, funky layers of cellar must, mowed grass, and leathery notes. On the palate, a regal acidity cuts through the medium body, leading to a bone-dry, satisfyingly tart finish that balances fruit intensity with wood-aged sophistication.

Appearance. Orange to deep amber-orange hue (SRM 10-12); moderate white head with fair retention and slight lacing; hazy to opaque due to wheat and significant fruit addition.

Aroma. High intensity; prominent ripe apricot and stone fruit esters; complex wild character including damp cellar, earthy must, fresh-cut grass, and a leathery, funk-driven 'salami skin' note; subtle vinous, gooseberry-like aromas from the Sauvignon Blanc grapes.

Taste. Initially sharp with high acidity; fermented apricot flavors are bright but lack residual sweetness; rustic funk follows the nose with earthy and barnyard notes; negligible hop bitterness due to the use of aged hops; very dry, clean, and acidic finish with a lingering tartness and faint oak tannin.

Mouthfeel. Medium body, which is substantial for the style; moderate carbonation; noticeable tartness and slight astringency from fruit skins and wood; no alcohol warmth; crisp and refreshing.

Complessa e dalla vivace acidità, aroma e gusto sono caratterizzati da intense e pungenti note di albicocche, cantina, sentori muffati e di pelle di salame. Bevuta scorrevole ed appagante.

Dice il birrificio: "La nostra nuova birra artigianale Boss è una wild ale in cui il mosto, appositamente creato con utilizzo di frumento e luppolo invecchiato, viene inserito in barriques e tonneaux con aggiunta di un pied de cuve creato con uva Sauvignon Blanc diraspata e leggermente pigiata. I lieviti ed i batteri naturalmente presenti sulla buccia d’uva avviano la fermentazione. Dopo circa 4 mesi vengono aggiunte 400 g/l di albicocche locali in macerazione."
