This innovative Weissbier reimagines the Bavarian classic by replacing traditional wheat with Farro, lending a unique rustic cereal character to the Pils malt base. The fermentation profile, driven by German weizen yeast, offers moderate aromas of ripe banana and white pear, accented by nutmeg and clove phenols. Floral and spicy Saaz and Aurora hops provide a delicate citrus lift. On the palate, a light cereal sweetness transitions into a crisp, slightly acidic finish with peppery notes. It is a refreshing, pale straw-colored ale that balances traditional fermentation markers with a modern, grainy twist.
Appearance. Pale straw color (6 SRM). Slightly hazy to veiled with a medium-persistent, moussy white head.
Aroma. Moderate to high intensity featuring classic esters of ripe banana and white pear. Phenolic character is prominent, presenting as nutmeg and clove. The malt profile is defined by fresh cereal and grainy Farro notes. Low spicy and citrusy hop aroma from the Saaz and Aurora additions.
Taste. Initial soft malt sweetness featuring bready and grainy Farro flavors. Hop bitterness is low, providing just enough balance against the malt. Fermentation character includes clove, pepper, and a hint of lemon-like acidity. Finishes dry and refreshing with a clean, effervescent aftertaste.
Mouthfeel. Light body with a soft, fluffy fullness. High carbonation contributes to a spritzy, effervescent sensation. Negligible alcohol warmth at 4.6% ABV and no perceived astringency.
