This Belgian Dark Strong Ale presents a sophisticated fusion of traditional monastic depth and nuanced wood aging. The foundation of four specialty barley malts drives a rich profile of deep caramel and bready toast, while the inclusion of oats provides a luxuriously smooth texture. Maturation in French oak barrels introduces elegant layers of vanilla and subtle tannic aromatics, differentiating it from classic examples. Esters of plum and raisin intermingle with the soft, herbal character of a singular Czech hop. The result is a complex, medium-bodied ale where sweet maltiness and spicy yeast phenols are balanced by a gentle, integrated warmth.

Appearance. Deep coppery-brown with exceptional clarity. Topped by a dense, persistent, light-tan mousse-like head that leaves delicate lacing on the glass.

Aroma. Moderate-high intensity featuring a complex bouquet of rich caramel, toasted bread, and dark fruit esters like dried cherries and figs. Distinctive vanilla and light woody notes from French oak blend with soft, spicy phenols and a subtle herbal hop presence.

Taste. Initial palate of sweet caramel and bready maltiness. Flavors of raisins and dates are prominent, complemented by smooth vanilla and fine oak character. Bitterness is medium-low, allowing the malt-forward profile to lead into a moderately dry, lingering finish of dark fruit and spice.

Mouthfeel. Medium-full body with a notable silkiness from the addition of oats. Carbonation is moderate and creamy, not sharp. Alcohol warmth is well-integrated and light, providing a smooth, warming sensation without being hot.
