Bird Brewery Uilstekend
This Black IPA presents a striking sensory contrast, bridging the gap between visual darkness and vibrant hop intensity. At 6.8% ABV, it delivers a punchy aromatic profile of fresh, fruity hops, leaning toward tropical citrus and resinous pine. These bright notes are expertly layered over a restrained malt foundation of toasted bread and light chocolate. On the palate, the firm bitterness is clean and well-defined, allowing the stone fruit hop character to shine without being overshadowed by the dark malts. The roast character is purposefully gentle, providing depth without any harsh ashiness, culminating in a dry, crisp, and refreshing finish.
Appearance. Dark mahogany to opaque black with deep ruby highlights when held to light. Pours with a moderate, persistent tan head that leaves dense lacing on the glass.
Aroma. High hop intensity featuring prominent notes of grapefruit, mango, and a touch of resinous pine. Low malt aroma provides a subtle backdrop of milk chocolate and toasted grain. Clean fermentation profile with virtually no esters.
Taste. Initial impression is hop-forward with citrus and tropical fruit flavors. Low to medium malt flavors of toasted crust and unsweetened cocoa provide a smooth base without burnt or acrid notes. Medium-high bitterness is firm but smooth. The finish is dry and clean with a lingering resinous hop aftertaste.
Mouthfeel. Medium-bodied with a smooth, slightly creamy texture. Moderate carbonation provides a crisp lift. A light, well-integrated alcohol warmth is present but subtle.
