Bird Brewery’s Ooievaarsbek is an inviting Wild Specialty Beer that highlights the tropical vibrancy of pink guava against a refreshing, lactic acidity. The sensory journey begins with an explosion of aromatic pink guava, offering notes of strawberry, pear, and tropical musk, intertwined with a clean, lemony tartness from the wild fermentation. Its light, effervescent body and bone-dry finish make it exceptionally thirst-quenching. Appearance. Ranging from 3 to 6 SRM with a distinct pinkish-orange hue derived from the pink guava. The beer displays a hazy to nearly opaque appearance. The head is light pink or off-white, with modest retention and minimal lacing.
Aroma. High intensity of fresh pink guava, characterized by tropical fruit, floral, and strawberry-like aromatics. This is backed by a moderate lactic tartness and subtle wild yeast esters. Malt presence is minimal, while hops are virtually absent, allowing the fruit and fermentation character to dominate.
Taste. An immediate, crisp lactic sourness leads into a lush display of pink guava flavors, mimicking the aroma's tropical complexity. The beer is very dry with no perceptible hop bitterness. The acidity is firm but clean, enhancing the perception of the fruit while leading to a short, refreshing, and tart finish.
Mouthfeel. Light-bodied and highly carbonated, providing a prickly, effervescent sensation on the palate. There is no alcohol warmth, and a very slight tannin-like astringency from the fruit adds structure to the otherwise crisp and lean mouthfeel.
