Big Oyster Brewery’s 5 Knots is a lean, aromatically charged American IPA that exemplifies the West Coast philosophy in a sessionable frame. The sensory experience is led by a punchy hop trio: Citra provides bright notes of grapefruit and lime, while Centennial adds a classic floral lift. Columbus anchors the profile with a persistent resinous pine and subtle earthiness. Despite its low-calorie focus, the beer delivers a clean, grainy malt backbone that stays out of the way, allowing the firm bitterness to shine. It finishes exceptionally dry and crisp, leaving a lingering, refreshing citrus zest on the palate.
Appearance.Brilliant clarity with a pale gold to medium gold color (approx. 6 SRM). Topped by a frothy, white head with good persistence and delicate lacing.
Aroma.High intensity hop aroma featuring distinct notes of citrus peel, lemon, and tropical fruit from Citra. Secondary layers of floral blossoms and pine needles emerge from Centennial and Columbus additions. Malt is very low, appearing as a clean, crackery background. Clean fermentation with no notable esters.
Taste.Initial impression is a sharp, clean hop bitterness that is firm but not astringent. Dominant flavors of grapefruit, pine resin, and floral spice mirror the aroma. The malt profile is minimal, providing just enough light, grainy support to balance the hops. The finish is very dry and crisp, with a lingering hop-derived citrus bitterness.
Mouthfeel.Light body with a crisp, clean texture typical of a low-calorie session ale. High carbonation provides a lively, scrubbing sensation on the tongue. No alcohol warmth is present.
