This elegant Tyrolean Farmhouse Saison presents a rustic, multi-layered grain profile derived from local Barley, Spelt, Rye, Wheat, and Oats. The yeast-forward character leads with vibrant esters of pome fruit and citrus, beautifully intertwined with a spicy, cracked-pepper phenolic bite. The complex grain bill provides a soft, bready foundation with a touch of rye-driven earthiness and the silkiness of oats. Floral, continental hops offer a delicate counterpoint, leading into a crisp, exceptionally dry finish. It is a sophisticated expression of local terroir, balancing rustic cereal depth with the classic effervescence and lively fruitiness of a traditional Belgian farmhouse ale.

Appearance. Pale gold to light orange (6-8 SRM). Dense, rocky, long-lasting white head with significant Belgian lacing. Unfiltered and hazy, typical of a multi-grain cereal bill.

Aroma. Moderate to high intensity with a complex blend of spicy black pepper phenolics and fruity esters reminiscent of lemon peel and yellow pear. The malt profile is noticeably rustic and grainy, highlighting nutty spelt and earthy rye. Low floral and herbal hop notes provide a delicate background.

Taste. Initial crispness gives way to a sophisticated, grainy palate of wheat and oats. Malt flavors are bready and rustic with a distinct spicy rye character.
