This celebratory Double IPA delivers an explosive hop profile, intensified by a massive dry-hop addition of Idaho 7 Cryo. The sensory experience is dominated by vibrant layers of overripe pineapple, zesty pink grapefruit, and a distinct resinous pine undertone. A clean, lean malt backbone provides just enough structure to support the aggressive hopping without introducing cloying sweetness. The fermentation character is exceptionally neutral, allowing the complex stone fruit and tropical notes of the hops to remain the focal point. Finishes remarkably dry with a firm, integrated bitterness and a smooth, warming alcohol presence that reinforces its formidable strength.
Appearance. Deep gold to light copper (8-10 SRM) with a brilliant clarity. Pours with a moderate-sized, creamy white head that exhibits excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity hop aroma featuring pungent tropical fruit, specifically pineapple and mango, alongside citrus peel and a sharp, dank resinous quality from the Idaho 7. Minimal grainy-sweet malt in the background with a very low clean alcohol note.
Taste. Initial hop-forward impression of stone fruit and citrus oil. Malt flavor is low and neutral, serving only to carry the high hop bitterness which is firm but lacks harshness. The Idaho 7 provides lasting flavors of pine and tropical fruit through the medium-dry, clean finish.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate-high, providing a crispness that aids drinkability. A refined, gentle alcohol warmth is present but well-integrated.
