La Chimay Grande Réserve Barrique – Calvados 2023 è una birra scura e complessa, appartenente alla tradizione delle Belgian Strong Ale. Basata sulla celebre Chimay Bleue, questa versione subisce un doppio affinamento: una fermentazione in botti di legno e una successiva in bottiglia. L’edizione Calvados si distingue per il suo bouquet aromatico fruttato, in cui si fondono note di albicocca secca, mela dolce e pera matura, tipiche del liquore di origine normanna.

Al palato offre un'esperienza sensoriale ricca e bilanciata: i sapori di cioccolato, moka e nocciola tostata si intrecciano con un fondo di biscotto speziato e un accenno di vaniglia. Un delicato tocco floreale completa il profilo aromatico, mentre il caramello scuro si armonizza con un'amarezza leggera, creando un equilibrio perfetto. Il retrogusto è caldo e persistente, ideale per la degustazione lenta.

La particolarità di queste birre è la fermentazione che dona alla birra un profilo gustativo complesso e pregiato. Per realizzare questa serie di Birre la Grand Réserve infatti subisce tre fermentazioni differenti; una prima nei tini, una seconda in barrique e l'ultima e terza in bottiglia. Ogni anno viene rilasciata una nuova versione in cui viene cambiata la tipologia di barrique che andrà poi a conferire alla birra ogni volta sapori e gusti differenti, ricchi e complessi.

Questa è la versione 2023, invecchiata in botti di rovere francese ed americano che contenevano Calvados distillato francese) di cui il profilo fruttato va a caratterizzare fortemente la birra. Versata nel bicchiere svela un invitante colore ambrato profondo con delicata schiuma color avorio. Elegante nei sentori, aroma e gusto sono fedeli tra loro; si percepiscono note fruttate al naso, come pera matura, mela dolce ed albicocche secche, sentori tipici del Calvados, che vanno a fondersi alla perfezione con le note più tostate ed ammalianti di caramello tostato, cioccolato e caffè fatto con la moka percepite in background. Sorso ricco e pieno con delicate sfumature amarognole e luppolate nel finale.

Voor de negende editie uit deze jaarlijkse reeks is ervoor gekozen om hem bovenop de Amerikaanse eik en Franse eik, ook nog eens op voormalig calvados vaten te laten rijpen!
