Brasserie Dupont’s Bière de Miel is a masterclass in balance, utilizing delicate Acacia honey to elevate its rustic Belgian Saison foundation. It pours a hazy, pale golden amber with a towering, effervescent head. The aroma is a complex tapestry of honeycomb, wildflower nectar, and signature peppery yeast, accented by bright notes of orange peel and lemon citrus. While the palate is initially greeted by a honeyed richness, the beer’s legendary attenuation leads to a surprisingly bone-dry, crisp finish. A firm hop tang provides structure against the 8% ABV, leaving a lingering impression of floral spice and earthy elegance.
Appearance. SRM 5–9; pale golden to light amber color. Distinctively cloudy/hazy appearance due to organic production and honey proteins. Massive, rocky white head with exceptional retention and thick lacing.
Aroma. High intensity with a dominant character of floral Acacia honey and honeycomb. Complementary fruity esters of orange and lemon citrus are balanced by spicy, peppery yeast phenols. Low to moderate grainy-sweet malt remains in the background.
Taste. Initial impression of honeyed richness that transitions quickly to a highly attenuated, bone-dry finish. Malt flavor is bready and soft. Hop bitterness is moderate and firm (approx. 20–30 IBU context), with earthy and herbal hop flavors. Fermentation character is clean but spicy with lingering citrus esters and a subtle hop tang in the aftertaste.
Mouthfeel. Medium-light to medium body with very high, effervescent carbonation that provides a prickly sensation. Noticeable but well-integrated alcohol warmth from the 8% ABV. No astringency; remarkably crisp and refreshing for its strength.
