This Belgian Tripel undergoes a sophisticated transformation through six months of maturation in Gouden Carolus Single Malt whiskey barrels, merging traditional monastic spice with refined oak. Aromas of peppery phenols and bright orange esters are layered over delicate vanilla and honeyed malt from the barrel infusion. The palate offers a structured interplay of spicy yeast and grainy Pilsner malt, followed by a nuanced whiskey character and soft tannins. Effervescent and remarkably dry, it masks its strength with a clean finish, leaving lingering notes of toasted oak and dried fruit against a firm, balanced bitterness.
Appearance. Deep gold to pale amber with excellent clarity and a tall, persistent, rocky white head that leaves intricate Belgian lacing as it recedes.
Aroma. High intensity with a complex bouquet of peppery and clove-like phenols alongside citrusy orange esters. The barrel contributes clear notes of vanilla, toasted oak, and a subtle malt whiskey sweetness over a light honey-like malt base.
Taste. Initial grainy-sweet malt gives way to a dry, spicy finish. Flavors of lemon zest and ripe pear are countered by moderate hop bitterness and oak-derived tannins. The Gouden Carolus barrel adds a layer of smooth malt whiskey, light caramel, and a touch of coconut.
Mouthfeel. Medium body with a lively, effervescent carbonation. The alcohol provides a gentle, well-integrated warmth that is deceptive. Smooth texture with a subtle, drying oak astringency on the finish.
