Appearance. Deep gold to pale amber color (5-8 SRM). Brilliant clarity with no haze. Still to very light carbonation; no head formation or lacing due to the nature of the mead and alcohol content.
Aroma. High intensity. Dominant herbal and balsamic notes with clear mint (hierbabuena) presence. Strong floral honey base with noticeable fruity esters including notes of pear and red berries. No hop aroma or malt character present. Very clean fermentation with a hint of spicy alcohol.
Taste. Initial impression is a rich honey sweetness quickly layered with medicinal and balsamic spice flavors. The mint provides a cooling sensation against the 9% ABV warmth.
