Mint the Gap! offers a sophisticated sensory experience that reimagines the Dunkles Weissbier through the lens of a classic confection. Built upon a robust foundation of Cara and Chocolate malts, the beer radiates deep mahogany tones while releasing a complex bouquet of toasted bread, rich caramel, and subtle cocoa. The traditional weizen yeast imparts signature notes of ripe banana and spicy clove, which find an unexpected and refreshing partner in the infusion of peppermint. This whirlpool-added herb provides a cooling, aromatic lift reminiscent of an After Eight mint, cutting through the malty richness to ensure an approachable, highly drinkable finish despite its elevated strength.
Appearance. Pours a deep mahogany brown with copper highlights (approximately 22 SRM). It is crowned by a thick, moussy, and long-lasting off-white head that leaves persistent lacing. Typical of the style, the beer exhibits a hazy, luminous appearance due to the high wheat content and suspended yeast.
Aroma. The aroma is moderately high in intensity, leading with a distinctive cooling peppermint scent. Beneath the mint, rich malt layers of caramel and bread crust are prominent, supported by subtle notes of milk chocolate. Classic fermentation esters of banana and phenolic clove are well-integrated, providing a fruity and spicy backbone that complements the herbal adjunct.
Taste. The initial impression is a harmonious blend of sweet caramel and cooling mint. Medium-high flavors of bready, doughy wheat and toasted malt are accented by soft Chocolate malt notes that suggest cocoa without harsh roasting. The yeast character provides balanced banana and clove mid-palate. Bitterness is very low, allowing the malt and mint to lead into a relatively dry, clean finish with a lingering, refreshing herbal aftertaste.
Mouthfeel. Medium-full in body, providing a creamy and fluffy texture on the palate. The carbonation is high and effervescent, which helps to scrub the tongue and maintain drinkability. A light, well-integrated alcohol warmth is present, reflecting the 7% ABV, while the peppermint contributes a slight cooling sensation.

Er is daarom gekozen voor een dunkelweizen met pepermunt. Dit om te benadrukken dat kleuren of andere zichtbare of onzichtbare verschillen prima samengaan en elkaar zelfs versterken. Om inclusiviteit te benadrukken. Hierbij symboliseert de pepermunt dat juist uniciteit tot meerwaarde leidt.
In deze dunkelweizen zijn extra cara- en chocolademouten toegevoegd waardoor de karamel- en chocoladesmaken in het bier iets meer aanwezig zijn. Door het toevoegen van pepermunt tijdens de whirlpool ontstond een mooi contrast met de karamel- en chocoladesmaken en blijft het goed doordrinkbaar en toegankelijk. Een soort van ‘after eight’-light.
