Punch the Clock (2024) is a vibrant Wild Specialty Beer that masterfully balances a low-alcohol profile with deep sensory complexity. The character is defined by a bright, lactic acidity that carries the punchy, jammy notes of blueberry and the floral, succulent juices of ripe peach. An intriguing addition of toffee provides a surprising caramelized sugar depth and a hint of buttery richness, grounding the sharp tartness of the wild fermentation. Despite its sessionable strength, the beer offers a layered experience where earthy berry skins and stone fruit aromatics collide with a lingering, savory-sweet malt finish.
Appearance. Pours a hazy, deep magenta to purple hue (SRM 18-22 depending on fruit density) with a fleeting, light pink head that dissipates quickly into a thin collar; minimal lacing.
Aroma. High intensity aromatics of freshly crushed blueberries and fuzzy peach skin. A prominent sharp, clean lactic tang is complemented by a distinct, sweet-savory toffee note and a background of rustic, earthy funk from the wild fermentation.
Taste. Initial impression is a sharp, refreshing sourness. Dominant flavors of tart blueberry and juicy peach lead the palate, followed by a mid-palate of caramelized toffee that adds complexity without heavy residual sugar. Bitterness is non-existent (0-5 IBU), while the finish is crisp, dry, and distinctly fruity with a lingering berry skin tartness.
Mouthfeel. Light-bodied and exceptionally lean. High carbonation provides a prickly, effervescent sensation that enhances the acidity. Very low alcohol presence with a slight, pleasant astringency from the fruit skins and tannins.
