This vibrant Wild Specialty Beer offers an expressive sensory journey, driven by a lush harmony of tropical and stone fruits balanced by warming spice. Intense aromas of ripe mango and jammy peach merge with the bright, citrusy zest of mandarine, while a delicate thread of rustic wild fermentation adds complexity. On the palate, a lively, clean lactic tartness highlights the succulent fruit profile, which is wonderfully grounded by a subtle, woody whisper of cinnamon. Appearance. Hazy, vibrant orange-amber hue reflecting the heavy fruit addition. Pours with a moderate, pale orange-tinted head that shows poor retention, quickly dissipating to a thin collar with minimal lacing.

Taste. Begins with a sharp, refreshing lactic tartness that immediately showcases bright mandarine citrus and tropical mango. The peach flavor is highly expressive but lacks heavy residual sweetness, tasting dry and fermented. Mid-palate introduces a warm, earthy cinnamon character that contrasts nicely with the sourness. Finishes very dry and crisp, with a lingering, tart fruit-skin finish.
Mouthfeel. Light-bodied with a crisp, refreshing mouthfeel. High carbonation creates a lively, spritzy sensation on the tongue. Alcohol warmth is absent. A very light tannin astringency from the cinnamon and fruit skins adds structure and enhances the dry finish.
