This Wild Specialty Beer presents a decadent, dessert-like sensory experience, defined by a lush saturation of dark and red fruits. Intense aromas of jammy Sweet Cherries, tart Raspberries, and earthy Blackberries lead the profile, underpinned by the warm, woody spice of Cinnamon and a nutty depth from Walnuts. The addition of Lactose provides a creamy, rounded sweetness that balances the sharp lactic acidity inherent to the style. On the palate, the fruit trio explodes with vibrant acidity, while the cinnamon provides a lingering warmth against a velvety, full-bodied backdrop, creating a complex interplay between tart fermentation and rich, pastry-like adjuncts.

Appearance. Deep, opaque purple-red; thick, mousse-like pinkish-violet head with moderate retention and heavy staining lacing; completely opaque due to fruit solids and lactose.

Aroma. High intensity; dominant notes of sun-ripened Sweet Cherries, tart Raspberry puree, and juicy Blackberries; secondary notes of toasted Walnuts and spicy Cinnamon; low lactic sourness; subtle vanilla-like sweetness from lactose; no hop aroma.

Taste. Bold, immediate impact of tart red and black fruit; high acidity balanced by the unfermentable sweetness of Lactose; flavors of cherry pie filling, fresh raspberry, and blackberry jam; mid-palate reveals earthy walnut and a distinct cinnamon warmth; very low bitterness; finish is long, sweet-tart, and fruity with a creamy lingering sensation.

Mouthfeel. Full body with a thick, smoothie-like viscosity; low to moderate carbonation; noticeable creaminess from lactose; minimal alcohol warmth; very low tannin astringency from fruit skins and walnuts.
