This German Pils, a collaboration with Gross, showcases the depth of traditional brewing via a rare triple decoction. The result is a profile where structured malt notes of toasted cracker and warm bread crust provide a sturdy foundation for an assertive hop presence. High-intensity aromas of spicy and floral German noble hops leap from the glass, followed by a palate defined by a crisp, clean bitterness and a bone-dry finish. Brilliant gold and impeccably clear, it balances the rustic elegance of the decoction process with the sharp, refreshing bite essential to the style, resulting in a sophisticated yet highly drinkable lager.
Appearance. Straw to deep yellow (3 SRM), brilliant clarity, with a dense, creamy, long-lasting white head and excellent lacing.
Aroma. Moderately high intensity of floral, herbal, and spicy noble hops. The malt character is more pronounced than a standard pilsner due to the decoction, offering rich notes of toasted bread crust and grainy sweetness. Clean lager fermentation with no esters.
Taste. Initial malt flavors of cracker and bread dough are quickly met by a firm, assertive hop bitterness. Hop flavors are spicy and floral. The finish is crisp, clean, and bone-dry, with a lingering, refined bitterness and a subtle mineral quality in the aftertaste.
Mouthfeel. Medium-light body with high carbonation, creating a crisp and refreshing sensation. It lacks any harshness or astringency, though a light mineral sharpness provides a pleasant bite.
