This oak-aged Brett Beer presents a sophisticated interplay of funk and fruit. Bellwoods Brewery leverages extended aging to develop a refined Brett character that leads with aromatic notes of Bosc pear and delicate green tea. The lack of fruit additions allows the nuances of the wood to emerge, providing a structured backbone of neutral oak. Despite its 7.7% ABV, the beer remains remarkably crisp and spritzy, reminiscent of champagne. The palate is defined by a gentle acidity and high attenuation, resulting in a bone-dry finish that highlights earthy complexity and bright, orchard-fruit esters, exemplifying a masterful balance between wild fermentation and clean, elegant drinkability.
Appearance. Pours a luminous deep gold with a slight, persistent haze. Topped by a bright white, fine-beaded head that shows moderate retention and leaves light, wispy lacing on the glass.
Aroma. High intensity with a complex bouquet of funky barnyard, wet hay, and earthy Brettanomyces. Distinctive fruit notes of Bosc pear and floral green tea are prominent, supported by a subtle, underlying hint of vanillin and toasted oak.
Taste. Initial impression is bone-dry and bright. Flavors of tart pear and herbal tea dominate the mid-palate, layered over a rustic, earthy funk. Malt presence is minimal, providing just enough cracker-like support. Bitterness is low, allowing the crisp acidity to provide structure. The finish is exceptionally clean and lingering, with a mild tannic oak character and a touch of stone fruit.
Mouthfeel. Medium-light body with a very high, effervescent carbonation that creates a spritzy, champagne-like mouthfeel. A subtle, well-integrated alcohol warmth is present, though the high attenuation keeps the beer feeling light and refreshing without astringency.
