This Saison offers a bright, rustic sensory profile led by a complex grain bill of buckwheat and oats, providing a soft, earthy foundation. The aroma is dominated by the vibrant, fruity character of Amarillo and Motueka hops, showcasing notes of stone fruit and tropical lime. Layers of sea buckthorn and orange peel introduce a sharp, citrusy tang, while coriander seeds weave in a subtle herbal spice that complements the peppery yeast phenols. Crisp and highly attenuated, the beer finishes remarkably dry with a lingering botanical bitterness, perfectly balancing its artisanal, seashore-inspired character with classic farmhouse drinkability.
Appearance. Hazy pale gold (6 SRM) with a dense, persistent white rocky head and intricate Belgian lacing. Effervescent with visible carbonation.
Aroma. High intensity aromatic profile blending fruity esters of orange and apricot with spicy black pepper yeast notes. Motueka hops contribute a distinct lime zest character, while Amarillo adds subtle peach. A rustic, grainy malt presence from the buckwheat is evident, complemented by the herbal warmth of coriander and a unique, tart berry-like hint of sea buckthorn.
Taste. A lively balance of citrusy hop flavors and peppery yeast phenolics. The oats and buckwheat provide a soft, slightly nutty malt core that supports the sharp tang of sea buckthorn and orange peel. Amarillo and Motueka hops deliver notes of grapefruit and tropical fruit. It features a moderate bitterness that feels firm due to the very high attenuation, leading into a bone-dry, spicy, and refreshing finish.
Mouthfeel. Medium-light body with a subtle, silky creaminess from the oats and buckwheat. Very high carbonation providing a prickly, effervescent sensation. No alcohol warmth. Crisp and clean with no astringency.
