Bellfield’s Cascadia evokes the classic era of the West Coast American IPA with a robust, resinous profile. This amber-hued ale showcases an intentional interplay of old-school hop intensity and supportive malt. The combination of Chinook, Simcoe, and Ahtanum delivers a firm foundation of pungent pine and grapefruit pith, while a generous Azacca dry hop layer adds modern facets of bright citrus. An assertive, lingering bitterness defines the experience, cutting through a light caramel malt sweetness to ensure a crisp, dry finish. It is a nostalgic yet refined tribute to the bold, bitter pioneers of the Pacific Northwest.
Appearance. Light reddish-amber in color with a brilliant clarity. Renders a persistent, off-white, medium-sized head that leaves consistent lacing on the glass.
Aroma. High intensity hop aroma dominated by resinous pine and grapefruit from the Chinook and Simcoe additions. Ahtanum provides floral and spicy accents, while Azacca adds a subtle tropical citrus lift. Malt is low to medium-low, expressing light caramel and toasted bread. Fermentation is clean.
Taste. Initial impression is hop-forward and assertive. Strong flavors of pine, citrus zest, and resinous oils lead the palate. The malt provides a clean, grainy, and slightly caramelly backbone that prevents the bitterness from becoming harsh. Medium-high bitterness is firm and purposeful. The finish is medium-dry with a long, lingering hoppy aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop resins. Carbonation is medium-high, providing a crisp bite. A very light, smooth alcohol warmth is present but well-integrated.
