Yesternight is a decadent, velvety Imperial Stout that channels the confectionery soul of halva. A year of maturation in Old Elk wheated bourbon barrels imparts sophisticated layers of toasted oak and soft vanilla, which entwine with an assertive profile of rich caramel and savory toasted sesame. The sensory journey begins with an opulent bouquet of bittersweet chocolate and nutty sweetness, followed by a palate overflowing with dark-roasted malts and earthy, oil-rich seeds. This massive stout balances its intense 12.8% ABV with a dense, viscous texture and a lingering warmth, finishing with a harmonious blend of bourbon character and deep, malty complexity.
Appearance. Inky, jet-black, and completely opaque (40+ SRM). A dense, mocha-colored head shows moderate retention, eventually subsiding to a persistent ring that leaves thick, oily legs on the glass.
Aroma. High intensity; a rich symphony of dark chocolate, espresso, and burnt sugar. The secondary additions shine through with distinct toasted sesame and buttery caramel notes, complemented by the wheated bourbon’s vanilla and oak. Low dark fruit esters of prune and fig are present.
Taste. Initial impression is one of indulgent sweetness and halva-like nuttiness. Malt flavors of toasted bread and black cocoa support a mid-palate of creamy caramel and earthy sesame. The finish is long and bittersweet, where firm hop bitterness and roasted grain meet charred oak and a smooth bourbon warmth.
Mouthfeel. Full-bodied, viscous, and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, and the high alcohol content provides a significant, smooth warmth that never becomes harsh or solventy.
