This Belgian Blond Ale offers a modern interpretation of the style, utilizing Simcoe and Azacca hops to infuse a vibrant New World character into a traditional framework. The sensory profile opens with a soft, grainy-sweet malt foundation, which is immediately enlivened by aromatic layers of pine, mango, and citrus. Classic Belgian yeast contributes a subtle complexity of peppery spice and orange esters that intertwine with the tropical hop notes. Effervescent and medium-bodied, the beer maintains a smooth, clean palate. It finishes impressively dry and crisp, with a gentle bitterness designed to complement hearty fare like sausage and potatoes.

Appearance. Deep gold color (5-6 SRM). Brilliant clarity with a large, dense, creamy white head that exhibits excellent retention and produces characteristic Belgian lace.

Aroma. Moderate to high intensity featuring a grainy-sweet, slightly crackery malt base. Distinctive hop character of resinous pine from Simcoe and tropical mango from Azacca. Complementary yeast-derived orange esters and a light background of peppery phenols.

Taste. Initial impression of grainy-sweet malt and soft honey-like sweetness. Hop flavors of citrus and tropical fruit are prominent, supported by a moderate bitterness. The fermentation profile adds subtle lemon esters and spicy-peppery phenols. Finishes medium-dry to dry with a lingering, smooth aftertaste of soft malt and hop resin.

Mouthfeel. Medium body with high carbonation providing a mouth-filling, bubbly sensation. Light, smooth alcohol warmth and a subtle creaminess on the palate. Low astringency.
