Dichotomy Double IPA presents a high-contrast sensory experience, uniting Northern and Southern Hemisphere hops. The aroma is dominated by the resinous pine and ripe stone fruit of Idaho 7, complemented by the intense passionfruit and citrus notes of Galaxy. Subtler layers of white grape from Nelson and zesty lime from Citra add complexity. This Double IPA pours a bright gold with a persistent white head. On the palate, a slightly sweet, clean malt backbone balances a firm, resinous bitterness that leads to a dry, lingering finish. At 8.1% ABV, it delivers a smooth, warming sensation typical of the style while maintaining exceptional drinkability and a clean fermentation profile.
Appearance. Deep gold to light copper (8 SRM). Clear with excellent clarity and a moderate-sized, persistent, off-white head that leaves thick lacing on the glass.
Aroma. Intense hop aroma featuring pungent notes of passionfruit and citrus from Galaxy, coupled with resinous pine and apricot from Idaho 7. Background notes of crushed white grapes from Nelson and zesty grapefruit from Citra. Clean, neutral malt provides a supportive grainy sweetness with a hint of smooth alcohol.
Taste. Strong hop flavors mirror the aroma, with tropical fruit and resinous pine at the forefront. A moderately high bitterness provides a firm structure against a soft, slightly sweet, grainy malt base. The finish is dry to medium-dry with a long-lasting, clean bitterness and lingering notes of grapefruit peel and melon. Low fermentation esters allow the hops to dominate.
Mouthfeel. Medium body with a smooth, slightly oily texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth that is restrained and smooth, lacking any harshness or astringency.
