Gineral Kenobi is a sophisticated Straight Sour Beer that masterfully integrates a sharp, clean lactic acidity with the aromatic complexity of a gin-and-tonic profile. The sensory experience is driven by vibrant citrus notes of lime and yuzu, which provide a bright, tart fruitiness over a delicate Pilsner malt base characterized by light crackery and biscuity notes. Distinctive gin botanicals introduce a layer of herbal depth, while a subtle quinine-like splash of tonic dryness defines the finish. Effervescent and crisp, this 6.5% ABV brew balances its bracing sourness with a nuanced botanical character, offering a refreshing and high-intensity palate.
Appearance. Very pale straw (2-3 SRM). Clarity is clear to slightly hazy. Features a large, dense, white head with poor retention, typical of the style's high acidity, and high effervescence.
Aroma. High intensity of sharp, clean lactic sourness. Dominant citrus aromas of fresh lime and yuzu are complemented by a distinct herbal gin botanical character. Low malt presence of crackery or biscuity notes. No hop aroma or fermentation byproducts like diacetyl.
Taste. Initial impression is a sharp, clean lactic sourness that is quite strong. A complementary crackery and grainy malt flavor supports the acidity. Pronounced citrus-lemony fruitiness from lime and yuzu provides a tart apple-like edge. Gin botanical flavors are evident, adding herbal complexity. Hop bitterness is undetectable, though the finish is exceptionally dry and crisp with a lingering citrus tartness.
Mouthfeel. Light body with high carbonation providing a prickly, refreshing sensation. Very light alcohol warmth is integrated well. Features a crisp acidity with no harsh astringency.
