This Witbier presents a refreshing take on the classic Belgian style, leading with a bright, zesty lime profile rather than traditional orange. Brewed with significant portions of wheat, it delivers a soft, bready malt foundation. Appearance. Very pale straw to light gold (2–4 SRM). Highly cloudy and opaque from starch haze and live yeast. Dense, white, moussy head with excellent retention and lacing.
Aroma. Moderate intensity featuring zesty lime and bright citrus fruitiness. Perfumy and spicy coriander aromatics are prominent, supported by a bready, grainy malt character with light honey notes. No hop aroma; yeast esters provide a light fruity background.
Taste. Crisp initial impression with a pleasant bready, grainy wheat malt flavor. Significant zesty lime citrus and herbal-spicy coriander flavors are well-integrated and balanced. Hop bitterness is low, providing just enough support for a dry, refreshing finish. No harsh or bitter aftertaste.
