This Specialty IPA presents a striking balance between deep roasted malts and the vibrant, modern hop profile characteristic of the style. The addition of dried red chillies introduces a subtle, nuanced fruitiness that complements the citrus and resinous notes often found in American hops. While the roasted malt provides a foundation of light chocolate and coffee without being overly ashy, the chilli's gentle heat accelerates into a notably dry, spicy finish. It is a bold, well-structured ale where the moderate alcohol warmth and piquancy harmonize with a firm bitterness, creating a complex yet drinkable sensory experience.
Appearance. Opaque black with dark mahogany highlights at the edges. Features a persistent, moderate light tan head with fine lacing.
Aroma. High intensity hop aroma featuring resinous pine and citrus zest. A supportive malt backdrop offers notes of light chocolate, toasted bread, and a whisper of caramel. Subtle earthy and dried fruit notes emerge from the red chillies, alongside a clean fermentation profile.
Taste. Medium-high hop bitterness is immediate, layered with flavors of grapefruit peel and resin. The malt profile is smooth and restrained, contributing unsweetened chocolate and cold-brew coffee without ashy harshness. The dried chillies provide a unique fruity mid-palate and a distinct, lingering spicy dryness. The finish is crisp and bitter, balanced by a touch of alcohol.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation leads to a prickly sensation on the tongue, enhanced by a gentle, warming spicy heat from the chillies and a clean alcohol presence.
