Malus Pater is a sophisticated and robust Belgian Dark Strong Ale that leans into the darker, more roasted side of the style. Drawing inspiration from monastic traditions, it offers an intense sensory profile defined by a deep, bready malt foundation with prominent notes of caramel and toasted grain. The addition of roasted malt differentiates this beer, contributing subtle hints of dark chocolate and a firmer bitterness than is typical for a Quad. Expect a complex tapestry of dark fruit esters—specifically raisins, plums, and dried cherries—woven with peppery phenols and a clean, floral alcohol warmth that lingers through a surprisingly dry finish.
Appearance. Deep mahogany to dark coppery-brown (22–26 SRM) with excellent clarity. It features a huge, dense, and persistent light tan head that exhibits exceptional lacing.
Aroma. High intensity aroma featuring rich, toasty malt and deep caramel, accented by a unique hint of roasted grain. Strong esters of prune, date, and fig are complemented by spicy, peppery phenols and a soft, perfumy alcohol presence. Hop character is very low and slightly herbal.
Taste. Initial impression is of rich, complex maltiness with flavors of toasted bread and dark caramel. This is quickly followed by intense dark fruit flavors including raisin and dried cherry. The finish is moderately dry, aided by a firm bitterness from both the added roasted malt and Continental hops (approximately 30-35 IBU). Alcohol provides a warming balance to the malt-forward palate without being harsh.
Mouthfeel. Medium-full body with a creamy, smooth texture. High carbonation creates a lively mouthfeel that prevents the high gravity from feeling syrupy. A noticeable, well-integrated alcohol warmth is present.
